I never thought paleo stuffed peaches would be so satisfying.
These hit the spot whether your on a “lifestyle change” or not.
I’ve been getting lots of stone fruit in my CSA, so I decided to use both nectarines and peaches in this recipe.
First, I shelled a 1/4 cup of pistachios.
Then, in keeping with the “P” theme, I added some pecans too.
Chop up the nuts.
Place them in a bowl and add 1/4 cup of coconut sugar (or brown sugar if you feel like walking on the wild side), a pinch of cinnamon and freshly grated nutmeg, if possible. Stir until combined.
Rinse, halve and deseed the fruit.
Place the peaches and/or nectarines in a baking dish and top with the nut mixture.
Spray with baking spray.
I used the coconut oil kind.
Bake at 350F for about 30 minutes, or until the sugar has caramelized and the fruit is tender.
Sprinkle on some chia seeds for good measure.
Finally, drizzle them with a loving dose of maple syrup.
If you really want to to treat yourself, scoop some ice cream on top.
I used my paleo and vegan coconut vanilla ice cream.
Slurp.
