Shishito peppers are small sweet Japanese peppers. They are perfect for sautéing or roasting whole with pretty much any flavors you like.
Since these peppers are Japanese, I decided to go with an Asian marinade which is a really obvious approach but whatever, stop judging me.
Ugh.

This East Meets West ice cream cookie sandwich will knock your flip flops off. The date and cardamom cookies are perfectly chewy, the saffron ice cream is rich and creamy and the pistachios add the perfect crunch.
This cardamom and date cookie is kind of like an oatmeal raisin cookie and a chocolate chip cookie had a baby.
My husband claims he doesn’t like dates (WTF) and is terrified of cardamom so when he asked what kind of cookies these were I said, “The kind that happen when chocolate chip cookies and oatmeal raisin cookies have a baby.” Intrigued, he grabbed one and took a bite. Now he keeps asking me to make more of my “weird baby cookies.”
